Ordering Rentals is Easy

While we offer the ability for our groups to bring in their own vendors, including rentals, we also have the option of renting directly from our venue. We offer assorted tables, chairs, linens, dishes, chocolate fountain, coffee pots, and even staffing for set-up, tear-down, and parking. We have kept the costs comparable to many other rental companies, but we do not charge the delivery fee. You have the ease of having your rentals on-site when needed. On top of that, when you rent from us, you get the rentals for the entire weekend.

We recently created a form to make ordering these rentals easy! Using formstack, all you have to do is enter the amounts of each item you'd like to rent, and our form totals everything for you. After finishing your order, you can easily make a payment through our secure service, or you can always coordinate payment with our office.

Engagement Sessions

Early spring and late winter is when San Diego is at it's most beautiful. Trees and flowers are just starting to wake up from their winter's sleep and begin to bloom. Everything is still crisp, bright, and fresh. We've had the opportunity to open up the property for a few couples and their photographers for engagement sessions. Our most recent session was with Dapper Images, who shot Amanda and Andrew's engagement session. Dapper Images has never ceased to impress us with their work. Yasmin and Deshun not only have an eye for their subjects, but they found the perfect setting for each individual shot, and created a beautiful mood between the couple. We were delighted to see the finished photos: professional and charming memories.

Rachel and Matt's Destination Wedding

This past week, our dear friends Rachel and Matt were married at our venue. They are one of the first couples to have a destination wedding on our property. Rachel and Matt and most of their family came all the way from New York for a middle-of-the-week wedding! Every few years, Rachel's family gets together for a family reunion, and she was able to turn this year's reunion into a wedding too! Our property was able to accommodate all of her family for a 3 day wedding/reunion experience!

Barn House Bathroom Renovation!

We've been working the last few weeks on renovating The Barn House bathroom, and we are proud to announce it's completion!

Improvements we've made:

Installed Bathtub

We decided to install a bathtub to replace the small shower we previously had. We put in beautiful green tile, with white accents.

Added tiled ledge to bathtub

We wanted the bathtub to be a comfortable, accessible area, so we installed a small ledge around the tub. This allows you to put up your feet and relax a little while. It also gives a convenient place for soaps and shampoo.

Put in new eco-friendly window

This window is weather-resistant and well-insulated to keep the cold out and the warm in (or vice versa during the hot summer months).

Re-wired electric

Outlets are now near the mirror for hair dryers, electric shavers, etc!

Moved toilet and sink

We think this layout works much better.

Put in Allure Flooring

We LOVE Allure! It is very easy to work with and install, and makes cleaning a dream. It is made of vinyl, but comes in a natural, oak color with nice texture for grip.

Put in new drywall and painted our walls a lovely sage green
New bathroom accessories

We found accessories to match our color palette of natural wood and sage, to go with the natural theme of the property. Our favorite part is the shower curtain, and the LED candles that create a soothing atmosphere.

Our good friends over at Bradley Fox Construction did the beautiful tiling project for us. They were also a great resource for us to ask questions about other parts of the project. Brad Fox, the owner, is awesome, and we highly recommend his services. We will definitely use them again!

We hope that our guests will enjoy it as much as we do, and make good use out of the whole bathroom.

We recently had a Wizard of Oz themed birthday party photo shoot at our venue. It was hosted by Urban Style Wedding Network, and had several different wedding vendors to provide set-up, treats, and photos. Everyone had so much fun playing on the property, and the girls were adorable!

As you know, Hidden Valley Retreat and Spa is committed to being a green venue. We work hard to have environmentally-friendly practices at the Retreat. We've joined the Green Chamber of Commerce, a community dedicated to helping green businesses succeed. They've recently been working on a YouTube series of green businesses, and we were lucky enough to be featured on it! The New Reception Area!

We have completed the new reception area! It's been done for a while now, but we've been waiting for our first bride to test it out!
The new Reception Area is a 20x40 ft space just below the wedding stage. In the vain of the rest of Hidden Valley Retreat, we did our best to keep it natural. It is lined with hand-set rock walls, just like the other tiers of the property. We used decomposed granite to "pave" the surface, giving it a natural look while still being hard enough to dance and lay tables. This space has plenty of room to seat 100 people at round tables.

It's Apple Season!

It's that time of the year again: Apple time! We have 6 mature apple trees in our orchard, and we've had delicious, organic apples for the last few months. When groups stay on the property, we always encourage them to enjoy, but we have so much that there's more than enough apples left. Our staff is always excited to take the fruit home to make delicious new recipes. We've made sweetened cinnamon applesauce, apple pie, apple crisp, and much more. One of our staff is a canned fruit expert, and she cans the apples to last throughout the year! Recently, my sister, an acclaimed pie maker, came to visit, so I took home a bag full of apples. My sister, Jane, has a peculiar technique of making her famous apple pie- no recipe! She throws in a little of this, a little of that, some secret spices, throw it in the oven and BAM, she's got some sweet apple pies for the whole family.

For those of you who like to keep their recipes precise and measure things out, here is a tried and true apple pie recipe:

Old Fashioned Apple Pie Recipe

Prep time: 1 hour, 15 minutes
Cook time: 55 minutes

INGREDIENTS

Crust Ingredients

2 cups all-purpose flour, plus extra for rolling
1/2 cup finely ground blanched almonds or almond flour (can substitute 1/2 cup flour if you don't have almonds)
16 Tbsp (2 sticks) unsalted butter, cut into 1/2 inch cubes, chilled in freezer for at least 15 minutes
1 teaspoon salt
1 heaping teaspoon brown sugar
3 to 6 Tbsp water, very cold

Filling Ingredients

2/3 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground allspice
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
3 pounds of 1/4-1/2 inch thick slices of peeled and cored
1 1/2 tablespoons brandy
1 teaspoon vanilla extract

Egg Wash

1 large egg yolk
1 Tbsp cream

METHOD

1 In a food processor, combine flour, almonds, salt and brown sugar, pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add water 1 Tablespoon at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready, if not, add a little more water and pulse again.

Remove dough from machine and place on a clean surface. Carefully shape into 2 discs. Do not over-knead the dough! You should still be able to see little bits of butter in the dough. These bits of butter are what will allow the result crust to be flaky. Wrap each disc in plastic wrap and refrigerate at least 1 hour.

2 Position rack in bottom third of oven and preheat to 375°F.

3 Combine sugar, flour and spices in large bowl. Use your hands and mix in the apples so they are well coated, then add brandy and vanilla extract.

4 Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes. Sprinkle some flour on top of the disk. Roll out with a rolling pin on a lightly floured surface to a 12 inch circle; about 1/8 of an inch thick. As you roll out the dough, use a metal spatula to check if the dough is sticking to the surface below. Add a few sprinkles of flour if necessary to keep the dough from sticking. Gently fold in half. Place on to a 9-inch pie plate, lining up the fold with the center of the pan. Gently unfold and press down to line the pie dish with the dough.

5 Spoon in apple filling, mounding slightly in center.

6 Roll out second disk of dough, as before. Gently turn over onto the top of the apples in the pie. Pinch top and bottom of dough rounds firmly together. Trim excess dough with kitchen shears, leaving a 3/4 inch overhang. Fold dough under itself so that the edge of the fold is flush with the edge of the pan. Flute edges using thumb and forefinger or press with a fork.

7 Stir yolk and cream in small bowl to blend. Brush over top of pie. Cut slits in top crust to allow steam to escape. Bake pie until crust begins to turn golden, about 20 minutes, then reduce heat to 350°F. Tent the rims with aluminum foil or a pie protector if the edges are browning too quickly. Bake until crust is golden and juices are bubbling, anywhere from an additional 30 to 45 minutes, depending on the type of apples you are using. Transfer to rack; let stand 1 hour. Serve pie warm or at room temperature.

Introducing: Aimee and Michael

Couples have been carrying on the trend of creating their own engagement and wedding websites for years now. As a wedding venue, we've seen a lot of our brides and grooms create unique, amazing websites, and we absolutely love exploring them! From photo stories to fun descriptions, our couples have the best ideas! The purpose of these websites is to provide information about the couple, their wedding party, the location of the ceremony, and even their gift registry. We recently saw a couple's website that we just had to share: Aimee and Michael. They are getting married at Hidden Valley Retreat on April 21, 2012. Like all of our couples, they will be hosting their very own weekend wedding.

Aimee and Michael's website stood out to us because of their description of our property. Their website not only explains how our property works, but gives specific directions on how the weekend will play out for each of their guests. They allow their guests to choose if they will be staying at Hidden Valley or at a hotel. They also give their guests the option of being part of the "cleaning crew" to pay for their stay, or to donate money to alleviate the cost of the property.

Here is what they said about us:

"The Hidden Valley Retreat has some accommodation onsite to the tune of about 40 spots for April 20th and 21st. A little over half of those spots are group bedding situations: combinations of bunk beds and rollaways. There are 4 small single bedrooms, and then a combination of a few Queens and Twins to make up the rest.

Once we send out invitations and begin receiving RSVPs we will start divvying up the spots, prioritizing the wedding party, the out-of-towners, and the immediate family who are arriving at Hidden Valley Retreat on the 20th of April, and working out from there.

If you’re willing to actively participate in the wedding preparations and clean-up, then your spots at the facility are complementary for the nights of the 20th and the 21st. If however you would rather take that time to enjoy the surrounding countryside or the facilities of the property then we would ask that you instead make a financial contribution to the tune of whatever you feel is appropriate for the accommodation. Any money received in this manner will go directly to offsetting the costs of the facility.

It should also be noted that there are only six bathrooms on site and thus if you are a particularly picky person who wouldn’t necessarily appreciate the dorm type atmosphere you may want to consider alternative accommodation. There are hotels relatively near the site and once we understand how many people are interested in hotel accommodation we will begin looking into obtaining group rates and possibly a shuttle service to go between the wedding and the hotel."

On top of the great description they have about Hidden Valley Retreat, they also have fun descriptions of their wedding party, and stories about themselves. Following in the ways of the eco-friendly couple, they have the option of viewing their Save the Date online, and having their guests print it out themselves.. On top of that, they are holding a group cruise as part of their honeymoon, how cool is that?!

Who gave that woman a jackhammer?

We are in the process of building a new reception area! It's right below the wedding stage. This space is going to hold around 12 tables to host 100 guests. We are currently working on clearing the space and leveling it. We are also building rock walls along the edge- by hand of course!

However, working at Hidden Valley Retreat is never as easy as it sounds. As we were leveling the space, we came across a HUGE boulder! Boulders are common on our property, if you've ever seen the Event Center, you would know; we've got boulders built right into the walls! Now we understand why-- those things are hard to break down! We were able to jackhammer most of it , but couldn't get it all. Now we have a permanent addition to the area: a beautiful, natural, white granite boulder to sit on. It matches the event center!

We will be posting many more photos as we make progress, but until then you can take joy in this photo of Fiona jack-hammering away!

A few months ago I experienced a wonderful Jewish service at The Hive in downtown San Diego. Rabbi Andrew Hahn known as the Kirtan Rabbi was visiting from New York and he held the most moving service. I was inspired by his music and chanting of prayers and I had an authentic deep Jewish Experience, I was moved physically, emotionally and spiritually.

Our family has been a member of a congregation here in San Diego for more than 20 years, Congregation Beth El in La Jolla. We enjoy a unique monthly musical Friday Night service in the style of Carlsbach. The sound and style of the Kirtan Rabbi’s service was so different and compelling. The chanting and eastern sounding music resonated with me. Honestly, I was moved to tears. Kirtan Rabbi also held services at other synagogues and homes in San Diego. He got great reviews and I heard that so many other people loved the feeling of his services.

After my experience with Kirtan Rabbi, I was elated to find out that he was asked to be the officiant for one of my brides at Hidden Valley Retreat and Spa! I feel like fate had a huge hand in bringing such an influential person back into my life once again. While discussing plans for the wedding, we began talking about turning his trip into a huge event. What we came up with is a Shabbaton Weekend! We are just thrilled with this idea and we have begun to make arrangements.

We are making plans and organizing meals and are about to open registration for a Spiritual Rejuvenation Shabbaton Weekend with Kirtan Rabbi and Friends. It is being planned for a wonderful weekend during Hanukkah (on Christmas Eve – forget the Chinese Food), and a very important time in the Jewish year.

I will soon be updating this blog, Facebook, and a whole new webpage dedicated to the weekend as plans fall into place. Stay tuned for rates, information, meal plans, activities, and speakers!

Daniel and Josh's Wedding

We were happy that Daniel and Josh chose Hidden Valley Retreat as their wedding venue. Dan and Josh chose to extend their Weekend Wedding to a 5 day wedding extravaganza, giving them the maximum amount of time to spend with friends and family. We were happy to offer them private and exclusive use of our property so that they could focus on each other and their loved ones.

Ceremony on the Deck

Dan and Josh were the first couple to have their ceremony on our deck overlooking the valley. We've always recommended this spot for a unique ceremony location, and they were the first to do it. They were able to comfortably seat 90.

They held their reception in the Event Center, which was beautifully decorated. Each guest received a crown or tiara to take photobooth style pictures with. (more photos to come)

Clickery Photography Wedding!

Our good friends and associates, Katie and Zack of Clickery photography were wed on May 10th, 2011. We have had a great relationship with them since we met at our bridal fair, and chose them as our preferred photography vendor. Katie and Zack are an extraordinary couple that own their business, and they photograph as a team.

You can imagine our joy when K and Z told us they wanted to use us as their wedding venue. Out of all the venues they've shot at, they chose us! We were honored to have them, of course.

All of that excitement was recently revived after we received a disc in the mail of all of their beautiful photos! Unfortunately, the talented team couldn't shoot their own photos, but they sure had an entourage of photographer friends to do it for them! Because Katie and Zack were so familiar with the property already, they knew all of the best locations (even secret spots) to take pictures together.

The New Barn House

These last two weeks were dedicated to renovating The Barn House. Our devoted Hidden Valley renovation team conquered this project. We targeted the Ranch Hand Room and the Rawhide room.

New Signs to label the bedrooms

We started by installing fans in all the bedrooms, because we have been having some hot summer days. Now the barn house guests can relax indoors with cool breezes rolling throughout the house!

We painted The Ranch Hand room a beautiful calm blue, and added matching throw pillows. The Rawhide room also received a fresh coat of sage green paint. We found some great original oil paintings and framed them, so each room has its own original piece of art! Each bedroom got new furniture, and all new lamps and light fixtures. All of the windows received a new window treatment, with funky curtains to match each theme. We also framed some great horse photos for the palomino room (we just love themed bedrooms)!

The new and improved Ranch Hand Room

We also added a few new beds, with all new comforters. Now the rooms are soft and cozy with their new bedspreads and fun decor! With our new bed configuration, the Barn House can hold up to 14 people. Each room now has a queen or king bed to hold couples.

In the Ranch Hand Room, we turned an oil lamp into an electric lamp with a bulb. We will post on how to make your own on our next blog!

Secluded Sites Make for Successful Meetings

June's issue of Meetings Focus West is one geared towards eco-friendly meetings and secluded retreats. Companies are looking for retreats and getaways that allow a full focus on their meeting's agenda. They are now meeting at places that offer peaceful powwows without the distraction of other vacationers and professionals that you would typically find at a hotel or convention. This goes to show that larger companies are focusing on their own environmental impacts, and they are finally doing something about it. Whether it is starting a recycling program at the office, or planning office getaways at an environmentally-friendly venue, companies are really making the effort to reduce their carbon footprint. We are very excited about two of Meetings Focus West's feature articles that highlight the importance of green venues and nature-surrounded retreats.

The first article, "Going Wild," emphasizes non-traditional meeting sites. The article states, "Groups can experience green in the truest sense of the word by taking advantage of parks and conservation areas all across the West."

The second article, "Hideaway Havens," promotes intimacy of a place that allow groups to focus on their meetings rather than be disturbed by outside distractions.

Wedding and Event Insurance

We require groups to have insurance when they rent The Hidden Valley Retreat and Spa. Some people ask why we require it, and what the benefits are of having it. We especially recommend event insurance to brides having their wedding at our retreat. We found a great article in The Knot today that describes perfectly the benefits and necessity of having event insurance, whether it is for a wedding or retreat.

Wedding Planning: Wedding Insurance 101

Though you might not want to think about it, disasters can strike your wedding day. From a sudden cancellation to stolen gifts to a damaged gown, wedding insurance can help protect you against the unforseen, and can also afford you great peace of mind. But what exactly is wedding insurance -- and how does it work? Here's the inside scoop.

What Is Wedding Insurance?

Basically, wedding insurance protects a couple's investment from circumstances beyond their control, and reimburses expenses incurred. For example, what if your limo driver doesn't show up and you have to book another one the morning of the wedding -- for three times the price? Or what if the groom's custom-made tuxedo is lost in airport baggage, and he has to buy a new one the day before the wedding? What if your reception space goes out of business a month before the wedding, and you lose your deposit and have to book another space? These are the types of big-day financial losses that wedding insurance can help to protect.

How Much Does Wedding Insurance Cost?

A basic insurance policy that covers loss of photos, videos, attire, presents, rings, and deposits usually costs anywhere between $155 and $550, depending on the amount of coverage you want. General liability insurance, which covers up to $1,000,000 for accidents, costs around $185.

Do You Really Need Wedding Insurance?

Before you buy wedding insurance, check with your each of your vendors to see how well they're covered -- your reception site or your caterer may already have their own insurance, so you wouldn't want to pay for overlapping coverage out of your own pocket. Ask your vendors for a copy of their policy, and then figure out where you aren't fully covered.

When Should You Get Wedding Insurance?

The sooner the better. Let's say you put a deposit on your wedding reception hall 12 months prior to your wedding date and then it burns to the ground a few weeks before the big day. With wedding insurance, you'll be sure to get your deposit back. But note: most insurance companies have limitations on how far in advance you can purchase insurance.

What Does Wedding Insurance Cover?

Problems with the site, weather, vendors, key people, sickness, or injury are the top concerns come wedding day. There is usually a specified maximum amount, which can be claimed under each section, and a deductible also applies. Be sure to find out the details of your insurance plan.

Site: Check to see if your ceremony and reception site is already insured. If it's not, wedding insurance can cover the cost arising out of unavoidable cancellation (such as damage or inaccessibility to the ceremony site), if your reception hall is unable to honor your reservation because it has burned in a fire, experienced an electrical outage, or just plain closed down. Sometimes this policy covers the rehearsal dinner site, too.
Weather: Any weather conditions which prevent the bride, groom, any relative whose presence at the wedding is essential, or the majority of the guests from reaching the premises where the wedding is to take place. Our First Harvest

At the Hidden Valley Retreat and Spa, we have compost gardens where we grow fava beans, tomatoes, zucchini, peppers, beans, various greens, potatoes, and more! We were excited to visit the retreat last week and we harvested these potatoes and fava beans! Yummy!

We dug up the potatoes out of the ground, and let me tell you, fresh potatoes are delicious! Although we planted the fava beans late in the season, we have an abundance of them!

We are excited to see what else is ready to harvest!

Garden Markers

You may have noticed the cute plant markers in some of our recent pics. These are so cute and easy to make! Not only will you know what seeds you have planted but they add some color and whimsy to your garden. We took paint stir sticks (free at Home Depot or Lowes) gave them a coat of paint and used a sharpie to write the plant names. That's it! They are sturdy enough to last the season and are tall enough to be seen amongst the tall tomatoes and zucchinis.

Garden Anxiety

Every year I go through this! We work and clear weeds, repair the irrigation, plant the seeds then wait... Will my seeds germinate? Will they survive the gophers, rabbits, slugs? Will they be fruitfull? Then I go up there and see that something new has emerged and I rejoice that all our work was not in vain! Here are a few pics of the most recent arrivals in our garden.

Compost Tea

Compost tea is compost that has been mixed with water and fermented. The benefits include a biodynamic culture of healthy bacterial and fungi that not only feed the plants with nutrients but also ward off bad bacteria, molds and fungi. While the jury is still out on whether or not it is better than using regular compost we decided to give it a try. At the very least there are asthetic benefits to using a tea rather than sprinkling compost or fertilizer on our lawn :)

I found the directions to build a fermenter online here http://www.care2.com/greenliving/guide-to-compost-tea.html. It cost me about $25 in parts and 15 minutes to put it together and start it up. After letting it run for about 4 days (the weather stopped me from doing it any earlier) we opened the lid and were greeted by the very pungent aroma of fermented, decayed plant material...yum. We strained it and used a watering can to sprinkle the new grass coming up on the lawn. We also plan on adding it to the soil of our vegetable garden before we put in our new seedlings. The directions also recommend using the tea on the folliage to prevent diseases. I'll keep you posted on how it works out. In the mean time we think compost tea is a great way to get living micro organizims back into the soil.

Our Terraced Garden

Ok, so this is part 3 of our series on terraced gardening. In this post we wanted to show how we have used our terraced garden to plant our community victory garden. As you have read earlier we have only planted peas, lettuce, arugula, garlic, onions, swiss chard, fava beans and potatoes so far. Many things have already sprouted! The rest of the plants have been started in a greenhouse and are kept warm at night with a heating pad. They are doing beautifully and will be ready to put into the ground as early as April (if the weather cooperates)

This is part 2 of our series on terraced farming. Dr Jensen was equally inspired by the people of the Hunza Valley not only for their healthy diet and longevity but also for their resourcefulness. They farmed an area that was was abundant in nothing but rocks. Similarly, Dr Jensen named the rockiest garden of the Hidden Valley the "Hunza Garden". We do have some native vegetation that makes it's homes among the rocks and hard soil, mostly succulents, native grasses and of course weeds. Which leads me to another similarity between HV and Hunza, everything is done by hand. Hunzakuts had a very "labor-intensive culture" and we too have experienced clearing, planting and cultivation all done by our callused yet loving hands. Lastly the Hunzakuts were crazy about apricots and mulberries, both of which thrive abundantly on the property. They dried the apricots for winter consumption, a note right out of Dr. Jensen's books. The more we learn the more we realize Hidden Valley is a melting pot of cultures from around the world and everything was done with purpose.

The Incas really had it going on!!

In the midst of our planting season we have done a bit of research and we are going to be sharing a three part blog about terracing. Dr. Jensen was really inspired by the Incas and once you see our property you will see why... like Dr. Jensen these people were able to use the terrain that was presented to them. Living high in the Andes Mountains the Incas were able to create step like terraces into the mountains and grow all sorts of delicious crops. By using the natural formation of the land they were also able to minimize erosion, as well as preserve soil quality.

Our Victory Garden 2011

Life up at Hidden Valley has been keeping us very busy. We just cleared six tiers in preparation for our new garden. As you might remember we were pretty successful last year with our organic vegetable garden, and we have decided to expand on this. We are planning on taking advantage of our long growing season and Mediterranean climate by starting our garden early with peas, fava beans, garlic and Italian Chicory. Same as last year we cleared it by hand, but were introduced to a Hula Hoe. Makes weeding easier. We cleared it in half the time. We built our bean poles. We'll show you a picture next week. Propagating Geraniums and Roses!

So, at Hidden Valley we are always trying to find ways to keep our grounds as beautiful as possible. We like to see our gardens green and full of color with the wide variety of flowers and plants we have. An easy way we’ve been keeping it green is by propagating the many colors of geraniums we have around the property with very successful results. Every time we trim a geranium we stick the stem into the ground and a new plant will grow. Just lately, we decided to expand this project to propagating the many heirloom varieties of roses that Dr. Jensen planted. We did not realize how easy it can be to propagate roses, with just one extra step it can be as easy as propagating geraniums. You cut at least a 6” piece of stem, preferably one with new growth, dip it in root hormone and plant it in potting soil. Covering it with a mason jar to create a mini green house is optional depending on the weather. How wonderful is that?!

Tips for Planning a Weekend Wedding

Would you like to turn your wedding into a full weekend of fun? The growing trend toward weekend weddings, filled with fun which can range from spa treatments to golf touraments for your guests, has caught on at destinations everywhere. This month, we talk with Tracy Curnette, Event Manager and Marriott Certified Wedding Event Planner for The Lodge at Sonoma for her tips on planning a weekend wedding--whether in Sonoma, California or elsewhere.

For brides planning a weekend wedding, what nearby attractions or on property activities are of special interest for their guests?

Sonoma: Well of course the Spa! But as I have already mentioned that, there are some wonderful winery tours to experience. We also have a number of historic landmarks, a wonderful downtown plaza with fabulous unique shops, art museums, and hot-air balloon rides.

Hidden Valley: While San Diego has all these activities to offer and more, we at Hidden Valley also like to take it easy and enjoy the simpler pleasures in life. Our activites include taking a walk, picking fruit, playing horseshoes or pool, read a book, relax by the pool, or cook a family meal. Sure we have the world famous Wild Animal park just minutes away but you can aslo stay in and enjoy Grandma's wold famous chocolate chip cookies too. You want spa treatments? We can arrange for you to enjoy them right on property as well.

Why do you think there has been a trend lately toward more weekend weddings?

Sonoma: Brides, grooms and their families are putting a great deal of care and planning into their weddings today. Often weddings are planned for one to two years in advance. A weekend wedding insures that the most possible invited will be able to attend. In addition, the fun is not limited to the day of the wedding alone. Activities can be planned to enrich and engage your guests for two or three days.

Hidden Valley: People are on tight budgets these days so a weekend wedding has many advantages for those of us who need to watch our spending.
   1. You can make it a wedding/ family reunion. If people are flying across the country you might as well be able to actually spend time with them.
   2. At Hidden Valley there are places for 40 to sleep at no extra costs. Meaning: no hotel rooms.
   3. A budget bride is a DIY bride. At a weekend wedding you family is there to help you. Need chairs set up? Favors wrapped? Isn't that what cousins are for?
   4. You get to actually spend time with your family. Enough said.

How can weekend weddings help join families and make everyone feel more comfortable?

Sonoma: With a weekend wedding family and friends are not seeing each other for the first time at the wedding ceremony. What types of activities have you helped weekend wedding brides arrange for guests?

Sonoma: Again the Spa! I have arranged Spa treatments for all of the bridal party and delightful luncheons in the Spa Garden. These can be planned for the day before the wedding or the morning of the wedding.

The groom and groomsmen are usually fond of a golf outing at one of our premier golf clubs. Infineon Raceway is also just minutes away. For the adventurous, ESPN Russell Racing Schools offer a full spectrum of open wheel racing courses, karting classes, driving courses and group adventures!

And of course, it is great fun to get friends and family together in a plush, luxury limousine bus, where speed is definitely not the focal point, and sample Sonoma’s wine.

Hidden Valley: Sure we can help you but most of the time families want to plan their own outings. A trip to the beach or the San Diego Zoo. San Diego has so much to offer but don't forget to leave time to relax and smell the roses.

What functions are especially appropriate for the day after the wedding?

Sonoma: Post-wedding bunches are very popular. Friends and family can get together one last time, enjoy delicious cuisine and sip mimosas or fresh peach Bellini’s. Some brides have even tied in their gift opening with this event. Don't we all want to see the presents?!

Hidden Valley: Mmmm...brunch. We think brunch is a fabulous idea but, not when it costs $50 per person. Why not take your newly integrated family and share some favorite family recipes. We have 2 kitchens so why not use them?

Fall is for Persimmons

Take a look at our Persimmon tree!

The one in the picture is a Hachiya persimmon. It starts out orange and when it's ready it's almost red. You have to wait till it's the consistency of pudding but, it is so sweet and delicious. We also have Fuyu persimmons. This version is a lighter orange and it's rounder. You eat it when it's hard and crispy like an apple. For the past two monthes we've been enjoying our persimmons. If you've never tasted one they are quite a treat. I've been sharing them with family, friends and of course our many guests at Hidden Valley. I also have been trying my hand at a couple sweet treats; most recently, I made persimmon cookies. Here is the recipe if you'd like to give it a go. I found it on allrecipes.com

Persimmon Cookies

2 ripe persimmons, pureed

1 cup white sugar

1/2 cup butter

1 egg

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup chopped walnuts

Directions

1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease or line one baking sheet with parchment paper.

2.Combine the flour, baking soda, cinnamon, cloves, nutmeg and salt.

3.Cream the butter or margarine with the sugar. Beat in the egg and persimmons. Add the flour mixture and mix until combined, stir in the chopped nuts. Drop by teaspoonfuls, 2 inches apart, onto the prepared baking sheet.

4.Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes.

April Winchell shares her wedding planning wisdom.

While perusing wedding sites I came across a column written by April Winchell for Brides Magazine. She is in the process of planning her own wedding and had been commissioned to write each month about her experiences. This being her second marriage and the creator of regretsy.com, she has been there and done that. This creates a candor and frankness that when applied to weddings leaves nothing but a meaningful event for all.

I have pulled some snippets from her articles that I think descibe our feelings towards weddings.

"...I'm not talking about spending money. It doesn't matter what favors are on the tables if you never stop to say hello to your guests; and your bridesmaids won't care about Tiffany key chains if you've been on full-throttle Midol alert for six weeks. I'm talking about thinking about others, and doing meaningful things to ensure lasting memories for everyone. It's a concept that's hard to keep in mind when everyone keeps insisting that it's "all about you." "

The reason behind the weekend wedding. A wedding where you actually get to see and spend time with your family beyond the receiving line.

"...the wedding is not your marriage. It's really just the best party you can afford to throw for the people who love you most."

Do what you love. Make the memory of your wedding include the time you spent with your family, not the cost of it.

"All I really know is that if I'm true to myself, I can keep my wedding from turning into something I can never get right. I can have what I truly want, and not pile a lot of expensive and ultimately meaningless gestures into something that already has enough meaning to last a lifetime." Enough said :)

"To be fair, choosing the venue is probably the hardest part of this whole exercise. I know it's been almost impossible for my fiancé and me. For one thing, our families live on opposite coasts, so someone's going to have to travel. But who?"

Jessica and James's Wedding

Hi Everyone,

We are very happy as our 2010 wedding season comes to an end. We would like to share with you a few of the photos and details from Jessica and James’s wedding. Jessica’s mom, Pam, acted as the planner of the entire weekend wedding. The event was beautiful! The ceremony was held at the Garden Stage with musicians playing on one of the terraces followed by an outdoor reception. The bride and groom took advantage of our gorgeous nature views and took beautiful pictures by the Garden Stage, the Orchards and the Amazon Fountain. Doe Visits Hidden Valley!

Hi Everyone,

So I was working outside on the gardens and started feeling as if I was being watched by somebody and, to my surprise, as I turned around I found this beautiful doe standing still looking at me! I couldn't help it and just stood there watching her back. It was wonderful to see this friendly visitor on our grounds!

DID YOU KNOW THAT ...?

* Deer have a great sense of hearing and can even move their ears in any direction, without moving the head.

* The antlers of deer are the fastest growing living tissue on earth.

* A fawn (a baby deer) starts taking its first steps hardly 20 minutes after being born.

We have a lot to celebrate because Eric and Marie just gave us the great news of the baby boy they had! His name is Noah and is just 2 months old. We received his picture and he is an adorable baby and looks just like his mommy. We are very happy to know that their love is getting stronger and we are sure that little Noah is making this 1^st anniversary that more special. We wish them many more anniversaries like this one, full of love, family and great news!

So Much Zucchini!!!

Anyone who has grown zucchini knows that once it comes, it comes in mass quantities all at once. And you can't neglect it otherwise you end up with something that looks like this.

GIGANTIC, MONSTER ZUCCHINI!!!

In case you can't tell, that zucchini is as long as my arm from elbow to fingertip. And there wasn't just one, there were 6 this size.

That being said, we have had to get creative with the recipes. Here is a recipe we've been enjoying for the world's best, super moist zucchini bread. My friend Daune came up with the recipe and it has been getting eaten as quickly as it is getting baked. Plus, it freezes well and lasts in the fridge for up to a week.

Ingredients:

6 c AP Flour

2 tsp Salt

2 tsp Baking Soda

2 tsp Baking Powder

2 tsp Cinnamon

1 tsp Nutmeg

1 tsp Allspice

1 tsp Cloves

6 Eggs

1 c Vegetable Oil

1 c Applesauce

2 c White Sugar

2 c Brown Sugar

2 Tbsp Vanilla

6 c Grated Zucchini (with the excess moisture squeezed out)

Directions:

1. preheat oven to 325 degrees

2. Grease and flour a 4"x8" loaf pan

3.Sift dry ingredients together in a large bowl (everything up to the cloves)

4. Beat eggs, oil, apple sauce, vanilla and sugar together

5. Add tthe wet ingredients to the dry ingredients. Mix to combine.

6. Add the zucchini and fold to combine.

7. Pour batter into pans (about half way up)

8. Bake 1 hour or until the a toothpick inserted into the middle comes out clean.

This recipe make 3-4 loaves

It took me about 1 hour and 25 minutes to cook 2 loves at once but it was well worth the wait. Enjoy!!

Rabbit vs Hare

There are hundreds of these rabbits/ hares on the property. We see them bounding about the gardens, orchard and up and down the roads. I greet them as "bunnies" but it occurred to me that they may not be rabbits. So I did a little research and looked at a lot of pictures of both and I have come to the conclusion that these are hares. The main differences are the long ears, long legs, their solitary life and their instinct to run from us rather than hide.

If someone can correct or confirm my assumption please let me know. Either way, they are the cutest thing to see on the property.

Organic Pest Control

As many of you know we are trying for a completely organic property. That being said, there are some creatures we would rather not have on the property like: mosquitos, mice, rabbits (in the garden) and gophers. The organic way to control the pests and balance our ecosystem is to encourage preditors to live on the property.

In the case of bats and owls we are building them homes. Bat boxes and owl boxes are easy to build and you can find the plans for free online. You can also find kits and prebuilt ones as well. We have an owl that lives in the palm tree by the deck and if you sit out there at dusk you might see it leave to hunt. Watch carefully because when they fly they are completely silent.

In our garden, we have a family of gopher snakes that keep the rabbits and gophers at bay. We didn't need to build them a home, we just avoid approching them so they don't get scared away. Since they are completely harmeless they are invaluable to anyone with a garden.

If you give nature a chance it will balance itself out and benefits our guests in the process.

Garden Update

Here are the current pics of our veggie garden. As you can see it is doing very well. Our sunflower has bloomed, we have a ton of baby zucchinis growing, the beans are blossoming and our watermelon is starting to vine. It's so exciting to see all our seeds grow into such huge plants. Our hard work is soon to be rewarded with fresh vegetables.

While reading an article in an organic gardening magazine I read about a 100 year old farm tool called a wheel hoe. It is still used today and has changed very little since 1890. I immediatly thought about getting one to assist in preparing the garden beds rather than using a pick, shovel and hoe like we had been doing.

The funny thing is that while walking the property last week I realized I had a wheel hoe sitting right next to the barn. All this time we had the tools; we just didn't realize it! So here are a few pics of Van sharpening the blade then using it to plow our new children's garden (more details to come). I'm sure this wheel hoe is at least 50 years old so it must have been used while Dr Jensen was here. Thanks Dr. J!

Our First Kids Camp!

The property was in top form last week as the Safety Patrol teams from Curie Elementary School and their parents enjoyed a fabulous experience at the Hidden Valley Retreat and Ranch. They had three world wind days of fun both on the property and enjoying local attractions. The kids loved the fountains, swimming, rock climbing, rope swinging and fruit picking right on our campus. They enjoyed day trips to Kit Carson Park where they visited the colossal sculpture garden called Queen Califia’s Magical Circle. They also went boating at Lake Wholford, visited a local equestrian center to feed the horses, and enjoyed morning runs way out on Old Wagon Rd. Take a look at the pictures below to see some of the great fun they all had during our first camp experience for kids!

Bees!

We are now the proud owners of a new bee hive! Our bees first came to us about 1 month ago and set up residence in the wall of our barn house . They busily began making honeycomb, honey and pollinating our flowers and fruit blossoms. Although they are nice bees and not at all aggressive we couldn't let them stay in the barn. We called up Geoff from http://www.bees-on-the-net.com/ and he came and relocated our bees to a hive in the far orchard. They are happy in their new home and we are looking forward to sharing all the honey they will make. We already got some from their first hive and it is delicious. Beautiful Day Lilies

Every once in a while you have to stop to smell the roses. In this case I was hiking around Hippocrates circle and saw these beautiful day lilies. There are many blooming on the property now but these caught my eye and I had to take a picture.

More Lights!

Since we all like to spend more time outdoors during the summer,
adding lights to the property has been a priority recently. You've
seen the lights we've put around the pool (which have been completed
now with a pool light!) now here are the pictures of the lights we've
put around the deck. There are 5 new lights on the main house, CFL of
course! And low voltage lights around the perimeter highlighting the
roses. Each of those lights use a mere 11 watts of electricity.
Doesn't it make you want to light a fire, sit on the bench and watch
the stars come out? It's one of my favorite spots on the property and
I know guests will love entertaining out there.

Our Veggie Garden!

Now that the rain and cold has finally passed, it is now time to put in our summer vegetable garden. Putting in a garden takes a little more time and energy but the results are well worth it. Since we do everyting organic and made by hand, we got into action. First we turned the soil and pulled any big weeds. Then we needed to prepare the beds for the seeds. We planted zucchini, squash, 4 types of tomatoes, pole beans, snap beans, corn, watermelon, canteloupe, cucumber, celery, asparagus, strawberries, and basil. Yum! As things begin to come up I will be posting more pictures.

Wild turkeys

So today I was walking down our driveway and I spotted one of the turkeys that live on the property. Can you see her in the pictures? This is just one of the 8 female turkeys that follow the male turkey "Franklin". I haven't seen him yet but I'm keeping an eye out to see him strutting around the property. When you come up you might spot them in the Hunza garden or hunting for bugs under the oak trees. I'll keep you updated with more pics when I see them again!

Improvement Work at Hidden Valley

Hey Everyone!

We are very excited and proud of the improvement work we’ve being doing at the retreat in the past 2 weeks. You probably remember that in February one of our trees fell down bringing down the fence from the Main House along with it. Being a green venue, we not only built a new fence but installed energy efficient lighting and installed electricity all around it with our very own hands! Fiona got into action working hard with the drill! During some clean-up work, we got a taste of nature’s strength; we pulled a weed that had made its way around a garden lamp! Take a look at the pictures below so you can see Fiona in action and the patio all illuminated.

We are all very excited at Hidden Valley Retreat and Spa because we will be exhibiting at the annual Earth Fair at Balboa Park! This is a great accomplishment for us because we pride ourselves in being a green venue. Clearing out Winter's Whirlwind

Well, we've had a number of changes over the past few months as the storms have rolled over these Valley Hills. The rain fall has inevitably altered the landscape and we had to say goodbye to our "3 Sister" trees that stood towering over the property for as long as we've known. The largest of the Sister's went down in the worst storm and miraculously avoided any disastrous destruction, beyond a section of a fence that is already in process of being rebuilt, and the loss of electricity for a couple of days. Here's Ian doing what he does best...working hard...

On a day that the rain came down hardest, Steve, Ian & I ran around the Ranch like it was the sunniest day in spring. Like spelunker's we ran from area to area (orchard to rock quarry, cactus garden to fish pond, patio valley platform to the enchanted forest) across the 11 acres to witness Mother Nature at her best!! The rain widened the streams that meander down the hillside and then the strategically placed waterfalls filled the stone fountain features. Over the past few weeks we've been working to get those same fountains cleared of sediment and ready for our viewing pleasure...here's a sneak peak, 2 angles of the one I'm anticipating most...

Along with restoration projects, the Ranch Hands and Ian have done an incredible job at maintaining the nature trails so that we can still enjoy our walks and sight seeing. The past few mornings I've been winding through these trails to see what's in bloom...

You're reading this post because something about driving into a Hidden Valley allowed you to daydream, to look out of a nearby window and wander into mother nature. If you've already visited us here at the Ranch you can surely picture what this time of year has to offer the wanderer...lush greens under the canopy's of oak, palm, fruit, and pine trees, blossoming roses still wet from the mornings dew, rain filled fountains trickling and plunking their way down into the dense dirt paths meandering throughout the eleven acre garden...my list is endless, but you wanderer's already have a list of your own Ranch favorites so I'll move on :) For those of you reading this post that have yet to visit us, take a tour at hiddenvalleyspa.com and get your time penciled in to come wander...
I titled this post "driving into Hidden Valley" because every day I drive home (my husband Ian and I are the new caretakers here on the Ranch) I feel like I get to escape into a hidden gem, driving along roads adorned with red and yellow leaves, homes decorated for the season, rolling hills and roaming animals...I just wanted to motivate others to allow for a little wandering to creep into your day, I think it keeps us youthful :) I'll post pictures within the next few days to better introduce myself and get ya'll caught up with life on the Ranch!

We recently had the NGLTF,(www.thetaskforce.org), for a week at the retreat to figure out their plans for the upcoming year. You have probably seen their progress in the news. They had a wonderful stay! Here are a few things they had to say about their time spent:

Speaking of the food, they asked for our chili recipe that we made for them, and though we wanted to keep it secret, we realized that was selfish, so here it is.

Arlene and Kate’s Chili

Ground beef (5 lbs.)
White onion, chopped (two)
Minced garlic (probably 10 cloves)
Diced tomatoes (huge can)
Tomato paste (can)
Tomatoes chopped by hand (3 big ones)
Chili powder (1 cup)
Ketchup (5 or 6 count squeeze)
Olive oil (1/2 cup)
Balsamic vinegar (2 tbs)
Red wine vinegar (2 tbs)
Kidney beans (3 small cans, 1 large can, or however many you like)
Chopped jalapenos (at LEAST three, but to taste)
Sliced jalapenos (can you handle it?!)
Corn (frozen bag)
Salt (to taste)
Black pepper (like 4 tbs)
Green bell pepper (one, chopped!)
Sugar (1/2 cup, seriously)

Combine.

Just kidding. Begin with cooking the ground beef in a sauce-like pot. Treat this first part as if you are making an extremely meaty meat sauce. Add the olive oil, salt, black pepper, white onion, and half of the minced garlic. Cook this up until it smells really good and your neighbors start dropping by unexpectedly. Add the tomato paste, chopped tomatoes, ketchup, and diced tomatoes. Perhaps you want to add some more meat at this point, perhaps not. We let this simmer for hours and hours while adding the rest of the ingredients in when we felt like it. We believe that you will have the same success with this tactic. Make sure you taste it as you go, or else! This recipe can feed anywhere from two to sixteen people, depending.

Summer Has Arrived!

Our blog activity has been quiet, of late, because we have been recuperating from the mad rush and flurry of activity that preceeded the May 30th Bridal Fair and Open House. Since that successful day, spring headed out the door, and summer was ushered in. Typical of the low-lying coastal regions of San Diego, May Gray and June Gloom have been dampening the spirits of many unsuspecting tourists. Fortunately, what all of this precipitation and humidity means is that the surrounding hills and magnificent fields of San Diego County have yet to turn from emerald green to velvety brown. Up at the Hidden Valley, the dense clouds of marine layer tend to break earlier in the morning, and a warm sun marches across the sky for a majority of the day.

Since the spring, we have continued to make upgrades to our property and its facilities. We are also eagerly awaiting the September nuptials of Eric and Marie, our lovely contest winners from Montana. However, the Hidden Valley is a popular venue that is fully-booked for the remainder of these summer days. Our guests include the Gay and Lesbian Task Force to family reunions and small weddings. Only two weeks ago, the Hidden Valley Retreat and Spa welcomed the Healing Gardens of Orange County, an Ayurvedic, natural health and healing organization that presented a Panchakarma Retreat. During their stay, guests were encouraged to relax and unwind amidst our nature spa's peace and tranquility with sunrise yoga, natural foods, personalized therapies, live music chanting, meditation, and more.

We look forward to hosting more of these events, as well as yours. If there is anything that we can do for you, then please let us know. Otherwise, we look forward to seeing you up at the Hidden Valley, - a treasure trove that is waiting to be discovered by you!

Last Saturday's Bridal Fair and Open House at the Hidden Valley proved to be a fun and exciting afternoon, - for all involved. Although the skies were gray and drizzly around both the city proper and low lying outskirts of San Diego, there were patches of blue sky to be found up the winding mountain roads east of Escondido.

On this day, the Hidden Valley was an oasis of casual cool and comfortable clouds. Over the course of these past few months, the Hidden Valley Retreat and Spa has seen some major upgrades. An outdoor stage, made of solely organic materials, was built and erected. Land was leveled, terraces were seeded and watered, and a green aisle leading from a dirt road up to the altar was laid. All in preparation of this day's festivities.

Our participating vendors, including Hair and Makeup Artistry by Melanie, Always and Forever Carriage Company, STS Invitations, So Belle, Music As You Like It, and Reverend Pat Borsum, all rolled in early to set up their booths within the Event Center gallery. The wedding contestants and Bridal Fair guests were next to follow.

The small assembled crowd was the perfect size for really diving into the events of the day. In the Event Center Forum, Party Hats Entertainment had set up a decorating station while Elliot Lawrence serenaded us all with his lovely acoustic, cocktail jazz. At one point, the gallery was empty and the forum was full, - of vendors, contestants, and guests alike, all clamoring to create an award-winning hat and bowtie ensemble.

An hour later, wedding contestants were cajoled into parading around the Event Center gallery while showing off their Party Hat creations. Although Nathaniel really knew how to strike a pose, and Carolyn and Mike two-stepped around the wood floor, it was Zeolah and Alex who won the 10-person Party in a Hat Box gift for their silly stroll, which included Zeolah talking on her cell phone and Alex dipping Zoi in a final pose. Tonya with Indulge Catering pulled up just in the nick of time, and we all headed down to the outdoor stage and ceremony site next.

The Grooms

There, the brides were corralled and the grooms were posted to their positions of waiting at the altar. The brides were spun around in tight, little circles for ten seconds and then they were off! They made a mad dash for the altar. Along the way, they stopped at different stations (where they had to put on: gloves; a large, white crinolin skirt; a garter; and chocolate flavored lipgloss). Then, they rushed up to their respective grooms and laid a kiss on his lips. The first bride and groom to be photographed won this "Rush to the Altar" race. Yet again, Zeolah and Alex took home the prize, - an engagement photo shoot with Kellerman photography.

Finally, the moment we had all been waiting for was upon us. With so many wonderful couples to choose from, including Ariana and Matt, Jennifer and Jason, Micheli and Richard, Marie and Eric, Rosella and Rudy, Chelsea and Nathaniel, and Zeolah and Alex, we were certainly hard-pressed to choose only one couple to win our "Who Wants to Win a Wedding?" contest.

In the end, we chose Marie and Eric of Billings, Montana, to receive our
September 12th, 2009 dream wedding. Eric's story of persistence in the face of loss inspired us. And, we hoped that his and Marie's non-local residence would provide opportunities for our participating vendors. We are really looking forward to hosting their wedding nuptials at our hillside paradise.

We also chose Chelsea and Nathaniel, a local Valley Center couple, as our runners-up. They received a 50% Gift Certificate to be applied to their wedding weekend at the Hidden Valley. For their participation and willingness to entertain, all of our attending wedding contestants received a $1,000.00 gift certificate to be applied towards their wedding weekend at the Hidden Valley.

Only 8,650 Miles to Love - Couple #27

8,650 miles is the combined distance that it took Micheli to leave her hometown in Rio de Janeiro, Brazil, and Richard his Baltimore, Maryland, upbringing, before cupid united these two at a Valentine's Day party in Los Angeles.

Cupid was quite literally a grown man wearing red, furry wings and a giant diaper, and his arrow was not initially striking at this Chinatown affair. The "Lock and Key" party proved to be a dud. Failing to find a spark with their counterparts wearing their matching key or lock, Micheli grew quickly frustrated and accosted the cherubic party host. He promised to find her a match.

Fortunately for Richard, he knew the man playing Cupid and he just so happened to be talking to him when Micheli walked by. Cupid grabbed her arm and exclaimed, "I have the perfect guy for you." Then he swung her around to face Richard.

It didn't take long before these two acted on what they knew from that very first moment, - that they are perfect for each other and that it was time to get hitched! As Richard says, "Winning the "Who Wants to Win a Wedding?" contest would be the perfect way to bring our far-flung friends and family together."

Couple #26 - Love In the Time of Childhood

Melissa and her military man met for the very first time when she was just 7-years old. He was her step-dad's nephew and, although his family moved around the country quite a bit, his and Melissa's mutual interest in one another was ignited with every encounter. However, it was not until the age of fifteen, when they were dance partners in her stepsister's "quinceanera," that these two children became close. With his family's move back to Miami, the young lovebirds not only become close, but they also became inseparable.

After years of moving, dating others, and the typical turbulences that accompany most adolescent years, these two were finally united here in San Diego, at Camp Pendleton. On September 12th, 2006, they married. There was no horse and carriage, or other memorable morsels to remember their commitment ceremony by. Rather, six-months later, Melissa was pregnant and her husband was shipped off for two back-to-back deployments. Finally, last summer, he returned and the happy family has been living together as a single unit since. Melissa is now hoping to win the wedding that she has always dreamed of. Although they are 100% ready to spend the rest of their lives together, their engagement has now stretched on for two-and-a-half years. This young couple feels torn between being financially responsible and having an enjoyable celebration for their family and friends. This time around, he says that Jacque makes him want to be a better man. She adores his doting affection and his chivalrous actions, while he loves the way they laugh and always have fun together. "We can have fun in any situation," he says. "We can walk to the grocery store at 11pm and laugh the whole way there and back."

These two lovebirds have been inseparable since last Halloween and, this year, Troy proposed. "He gets down on bended knee, and proposes everyday," Jacque writes. Latisha and Scott's love story has been a serious lesson in perseverance. After seven years of marriage, Latisha grew tired of being rejected by Scott's family as well as Scott's refusal to stand up for both her and their children. So, she left him, - just like that. Latisha, on the other hand, was not sure if she wanted to reconcile, but she was always a person who believed in second chances. So, this couple of old started attending marriage counseling sessions and, little by little, Latisha's passion started making a come back. Love was reborn, anew.

Couple #21 - Love On a Rainy Day

Rain's month could not have been any worse. She got laid off and was struggling to find new work, her roommate moved out, and then her beloved Chihuahua ran out the front door and underneath the wheels of a speeding motorist. Her life was quickly becoming a bad country song gone worse. Fortunately Justin, a skinny rocker dude with tattoos and long black hair, walked out his sister's front door and into Rain's life.

Justin was her neighbor's brother and, after an evening spent outside talking for hours, he reminded Rain of "how beautiful life can be and how full of promise a new day is." The "Who Wants to Win a Wedding?" contest is winding down. In the posts that follow, you will find the profiles of twenty couples who have entered our dream wedding giveaway. From San Diego to Los Angeles, from Montana to Arizona, and from Rhode Island to Massachusetts, their love stories are diverse and filled with tales of hope, loss, perseverance, and redemption. Thus, we are going to need your help in deciding which couple to award a 70-person wedding to on September 12th, 2009.

Couple #20 - A Match Made in a Massage Parlor Heaven

Jenny and Jason are both massage therapists who met while co-working at a spa. At that time, Jenny was married and Jason was torturing himself by chasing other women. After three years of watching Jason cycle through romances, Jenny became a divorcee. During one fateful night at work, these two wandering souls shared a conversation that seemed to cover eveything all at once. As Jenny says, "I felt more connected to him than I had to another person in years." Jenny marked her return to the dating scene, after a 10-year hiatus, by calling Jason up and asking him out, but he turned her down! Apparently, he had band practice that night and, he was so discombobulated from the offer, he forgot to ask for a raincheck. Kicking himself over a lost opportunity, Jason emailed Jenny a few days later and asked her out this time. Upon receiving his email, Jenny became giddy like a teenager. She jumped up and down around her apartment. These two soulmates, who fit together like jig-saw puzzle pieces, have been together ever since.
Unfortunately, the collapse of the economy took with it a nest egg that was intended to be used for their wedding nuptials. The setback took the wind right out of this couple and they have been floundering for ways to create the wedding they envision since. They're keeping their fingers crossed that the Hidden Valley's "Who Wants to Win a Wedding?" contest will be the answer they've been seeking.

Couple #19 - Ignoring the Crowd, and Listening to the Heart

Kirsten was a cheerleader and Alexander was just a silly boy that all the girls on the squad would look at and say, "Ewww...look at the geek!" Even though Kirsten pretended to agree with the viewpoints of her peers, she secretly harbored a longing to squeeze, hug, and kiss, Alex. All it took was one little love note, slipped to Alex during class, and this young couple has been working through the ebb and flow of life together ever since. Although the past five years have been wrought with emotional trauma, as well as the tension and stress that racial and religious divides can create, Kirsten and Alex have found in each other the strength to cope, relate, and push forward. They are now studying for degrees, in Human Services for her and Forensic Computers for him. Winning this contest would provide for the best day of their lives, - the day when Kirsten and Alex's hands are united in marriage. As Kirsten says, "I want to be the first one he wakes up to, and the one who, when he says me naked on the toilet he doesn't run and scream for his life."

Couple #18 - Pepe le Peu's Persistence Finally Pays Off

Finally, after two years of nagging her to go out on a date with him, Eric got Marie to relent. The friends of two years only dated for a little while before they broke up due to vast differences in their personal lives. Eric was heart broken. He was so love sick that crying became habitual and hunger never seemed to set in. Nonetheless, he made a personal resolve, - he would take every step neccessary to recapture the love of his life. And, he did! The happy couple have been inseperable since last August. On Valentine's Day, Eric proposed and Marie said "yes." In regards to their love story, Eric says "ours is a testament to a spirit who refuses to be told that something cannot be done." He also writes, "winning this contest would be the most incredible conclusion to this extraordinary courtship. My reward is to have the love of my life in marriage, and winning this would only add to this majestic covenant."

Couple #17 - If the Heart Leads the Soulmate Will Follow

Rosella and Rudy met when they both volunteered for a church program in February of '07. Rudy says that "Rosella's pretty face hasn't left my mind since the moment when I first laid eyes on her." Although Rosella was initially intrigued by Rudy's
6'6" stature, she wasn't as sure. In a bold, early move, Rudy asked a mutual friend for Rosella's number and called to ask her out on a lunch date. However, after their second date, Rosella tried to tell Rudy that she just didn't think they were a good match. Undeterred, Rudy asked Rosella out again. His persistence eventually broke though her tough walls, and this happy couple hasn't stopped dating since. Together, they are currently taking a pre-marital class and are striving daily to "grow closer and to strengthen our walk with Christ." Rudy writes that he and Rosella want to "be an example of how marriage is more than just a life-long commitment; it is a gift from god that should be treasured for life."

These May days are springing past us. Memorial day will soon be here, bringing with it another summer as well as the winners of our "Who Wants to Win a Wedding?" contest. On May 30th, we will announce our lucky contest winners at a Bridal Faire up at the Hidden Valley, from noon - 4pm. Until then, we have more exciting news to report as the contestant entries and the participating vendors keep rolling in.

Now introducing couple #16, - Tammy and Mark of Phoenix, Arizona.

Tammy's world seemed to be falling apart all around her. She had just relocated herself, and her two children, to Phoenix when she discovered that her fiance was not the man she had been led to believe he was. Devastated and distraught, she packed her, and her children's, belongings and moved out. In need of moving assistance, her cousin and his friend volunteered to help. It was then when Mark, a patient and caring man, walked into her life. He hasn't left her side since.
Tammy is hoping that winning this contest will be her thanks to Mark for all that he has done for her and her children since that fateful day.

Couple #15 - A Soldier's Return and a Couple's Love Reignited

As a single mom, Jen was won over by her now husband when, after years of friendship, he finally asked her out on a real date. Together, this happy couple was first married during a tiny, cheap, and rushed, wedding over ten years ago. Now, Jen is eagerly awaiting her husband's return home from his deployment overseas. Couple #14 - Cupids Arrow Finally Strikes These Two College Acquaintances

Zach and Lauren first met in Calculus class during the fall of '04 at the University of Missouri-Columbia. At the time, they were both in serious relationships with other people, thus Cupid had to take a raincheck. Years later, as college graduates and business professionals, the arrow struck.

The young people were re-introduced, through friends of friends, and they eventually went out on their first date. It was a Cardinals game and, somehow, Lauren's aunt managed to tag along for the ride. Nonetheless, Zach and Lauren hit if off and began dating soon thereafter.

One night, during a BBQ at his place, Zach hit the ball far out of the ballpark when he got down on one knee and seranaded Lauren with Garth Brooks' song "Shameless." True to form, Zach performed it in front of all of his assembled dinner guests and friends.

During the winter of '06, Zach fell deathly ill with a Staph infection. Lauren had to skip out on numerous holiday parties and family events in order to be at Zach's bedside in the hospital. It was then when she realized how much her and Zach were meant for each other. Ever since, she says, "we have known that we wanted to spend the rest of our lives together, and that we would do anything for each other."

Lucky Couple #13 - Happiness Found At the End of One Rainbow

Vanessa and Daniel met in Boston in 2005. At the time, Vanessa was a distraught single mother of a son who was suffering with severe asthma. Vanessa and her son spent almost a year of stressful time at the Children's Hospital, where Daniel was a security officer. Daniel was kind, open-hearted, and sympathetic. He always offered a gentle smile and a warm hello, even though Vanessa continually snubbed him and his offerings. However, after Vanessa's son had healed and been allowed to return home, Vanessa received an email from Daniel.
He began to charm the lovely lady through the world wide web. After months of casual conversations, this sweet couple finally moved their relationship outside. Lucky and Laurie first met in 1982 in Kona, Hawaii. They were both working in the hospitality industry while leading the lives of a musician and an outdoors enthusiast. After quickly hitting it off, Laurie soon found herself taking care of Lucky's 10-year-old son as well as his 70-year-old mother. Next thing she knew, ten years had elapsed, two more children were born, and then the young couple split up for seven years.
However, 1999 reunited their paths. Laurie moved back to the mainland, and back in with Lucky. These two star-crossed lovers finished raising their sons together. Jacob is now in the USMC, and Zachary is completing med school. Meanwhile, their parents have yet to marry. The "Who Wants to Win a Wedding?" Contest is the perfect opportunity for Lucky and Laurie to, finally, pronounce their undying love for one another in the presence of their two beautiful sons, and other close friends and loved ones.

Couple #11 - Videogames and a Non-Virtual Love

Chelsea and Nathaniel met during their freshman year of college. One day, Nathaniel popped his head outside of his bedroom door just as Chelsea was strolling by. He introduced himself and then asked her to join him for some video game playing. Although Chelsea said that she might, she never showed up for a game and Nathaniel spent a whole night in waiting.
Months later, the dorm neighbors ran into each other again at the cafeteria. This time, Nathaniel pretended not to know the girl whose eyes made him cower. Feeling snubbed, Chelsea stomped off and then proceeded to shoot dirty looks at the boy feigning forgetfulness. Finally, Nathaniel grew weary of the game of love that he and Chelsea had been dancing around for months. He went up to her and re-introduced himself. "Yeah," Chelsea responded, "we've met."
"So, if I know you and you know me, then maybe you could stop glaring at me every time we see each other," Nathaniel purred.
Now, the happy couple are college graduates (they have the same degree no less!) who have realized that they are perfect together. They have settled in San Diego, where Nathaniel proposed and where Chelsea plays video games.

Kelly works for a national bank while Justin stays busy in the hospitality industry. At home, they pour their love and attention into their two Chuhuahuas. Couple #9 - Two Soldiers and One Proposal

Zeolah and Alex are two marines who were stationed in Japan in 2004 when they met.
Slowly, during deployments and training exercises, these two service members warmed up to each other. One day, Zeolah became violently ill. Alex brought her miso soup and pudding beacuse he knew that it was the only food she could stomach. It was this sweet, simple action which convinced Zeolah that he was the man for her. Upon his return from a deployment to Korea, Alex fell to one knee and proposed.
The excited couple had a bittersweet ceremony before a justice of the peace in Okinawa. Zeolah cried that day not just because she was happy, but because she missed the presence of her mother, father, and other close family members. As we all know, there is nothing better than celebrating the milestone memory of a marriage with your closest family and friends. This is what Zeolah is hoping for, - the chance to celebrate her's and Alex's love for each other with their family.

Bonnie worked at a local pizzeria where Michael and his family often came in. Although the chemistry between these two was instantaneous, their blossoming relationship only consisted of sweet flirtations and innocent smiles for years. They were, after all, only high school students, - young, naive, and with a big, wide open future ahead of themselves. Last year, after three years of patient waiting, the sparks flew.
While working at the pizzeria, Bonnie became engaged in the friendly banter of Michael's family. She found herself, along with Michael's mother, chasing Michael into the restroom, where they tickled and pinched him until he was squealing like a little boy.
Since then, it has pretty much been an open and shut case. Girl meets boy. Girl chases boy into bathroom. Boy proposes to girl. Love's tales continues...
